Tamales are traditionally Mexican, and I love that they have found their place in American homes, especially for Christmas. And even when tamales are the most ancient dish of Mexican Cuisine, we will always find new recipes. I’ve heard there are more than 4,000 recorded to date, but I’m sure there are more. Today, we’re keeping them mostly plant based.
