Sour cherries are tart and have a unique flavor. We focus on using cherries by exploring flaky crust techniques and practicing lattice and cut-out shaping for pies. We also develop a classic scone and experiment with pairing cherry with other flavors. A celebration of American sandwiches. The hard Kaiser roll, originally from Europe, became the basis for New York’s famous roast beef and beef-on-weck sandwiches. Soft rolls are a little sweet from the inclusion of butter, egg or milk and pair beautifully with southern pulled pork or New England Lobster salad.
