As the wine season gets underway, and the wines of the previous harvest are coming alive, the winemaker’s hard work comes out to play in the flavor profiles that were established. In this dinner, we will bring together the flavors in the food to match the balance of the wines. Summer Squash Soup with Parsley-Mint Pistou, served with Alsatian Pinot Gris; Chopped Salad Dijonnaise with Apples, Bacon, Blue Cheese & Walnuts; Glazed Duck Breast w/ Clementine Sauce, served with Syrah; Butternut Squash Puree; Grilled Pineapple with Macadamia Crunch Ice Cream
