We are all familiar with the Blue Zones around the world–areas where people enjoy longevity and healthy lives. A distinct version of the Mediterranean diet is followed on the Blue Zone island of Ikaria; a small, relatively isolated island in Greece. Natives of Ikaria follow one of the healthiest diets and lifestyle regimens in the world and their food, methods of preparation, and culture have been examined extensively in an effort to reveal the secrets of their longevity. In this class we will discuss these findings and will enjoy dishes typical of Greek Island cooking.
