The Advanced Techniques class is a four-week menu based series for the experienced home cook. The classes will put an emphasis on knife skills, perfecting proper technique and plating as the menus get more complex each week.

Week 1 – A Celebration of the End of Summer – Th – 9/10
Crab Tower with Gazpacho Salsa; Pan Seared Halibut with Corn, Bacon and Lump Crabmeat with Herb Emulsion; Marinated Grilled Peaches with Vanilla Bean Ice Cream

Week 2 – Classic Dishes for a Fall Feast – Th – 9/17
Eggplant Timbale with Tomato, Parmesan and Anchovy; Filo Beef Wellington with Bordelaise Sauce, Roasted Carrots and Potatoes; Chocolate Mousse
Week 3 – Dinner in Provence – Th – 9/24
Goat Cheese Tarts with Mixed Green Salad and Thyme Vinaigrette; Chicken Provencal with Roasted Shallots and Lemon; Apple Galette with Crème Chantilly
Week 4 – The Flavors of the Great Southwest – Th – 10/1
Barbecued Duck and Shiitake Mushroom Quesadilla with Fruit Salsa; Southwest Spice Rubbed Pork Tenderloin Medallions with Bourbon Ancho Chile Sauce, Sweet Potato Tamales and Sautéed Swiss Chard; Pumpkin Pecan Buttermilk Tart with Cinnamon Ice Cream
