Tips and Tricks:
Throughout the class, Chef Diana provided many helpful tips for making the perfect smoothie. First, you want to make sure you are using a very ripe banana. This will increase the sweetness of your smoothie. If you have extra ripe bananas, freezing them is always a great option. Freeze bananas without the skin and inside an airtight bag. Second, if you decide your smoothie needs a little extra sweetness, reach for the honey, not the strawberries. Not all strawberries are sweet so it is easier to control the sweetness by using honey. Third, use boxed coconut milk, not canned. Boxed is better for smoothies as it is lighter, more like milk.

The smoothie was incredibly refreshing; it was the perfect blend of tart and creamy. It was especially satisfying knowing these smoothies were healthy and nutritious so we did not have to feel bad going back for seconds.

The great thing about making smoothies is that there is no “wrong” answer. Have some fun with it, experiment with different ingredients, and create your own smoothie masterpieces. This smoothie can be made in a Vitamix or a food processor.
Recipe: Berry Banana Smoothie
(Serves 2-3) 2 cups unsweetened plain (or vanilla) coconut milk 1½ cups fresh (or frozen) strawberries 2 — ripe bananas, broken into chunks 6 oz. plain (and/or vanilla) yogurt 1 tsp. honey 1 cup ice 1 tsp. flax seed (optional) 1 TBSP. almond butter (optional)- Place all ingredients into the Vitamix (or food processor) and blend on high-speed until smooth, creamy and well combined, about 1-2 minutes.
- Pour into two large glasses and serve immediately.
