Preparation of any meal, gourmet or otherwise, begins here. Chef Brian will teach your teenager (ages 13-17 only, please) the proper techniques for handling, sharpening, and caring for knives. This class includes an overview of the types of knives and their uses. Students learn basic cuts including brunoise, dice, julienne, and how to break down (debone) a whole chicken.
