Week 5 will lead us into the realm of mousses and fillings. Few techniques can be more versatile than a good stable chocolate or fruit mousse. We will prepare both as well as delve into what makes a good ganache. We will use our handiwork to fill a variety of shells as well as molds we will use for plated items in week six.
