The vineyard is quiet as winter progresses. Wines that have been maturing are being made ready for bottling. A vineyard will often showcase their wines with a special dinner. Once the wines are chosen, the chef turns to his repertoire of recipes to create the dishes that will enhance the wine and bring about the harmony between wine and food [courses will be paired with appropriate wines]. Crab Velouté with Celeriac (celery root); Roasted Sea Scallops over Cauliflower Puree with Bacon and Chives; Baby Spinach and Apple Salad with Lime-Mustard Vinaigrette with Sweet/Spicy Pecans; Lamb Osso Buco with Oven Baked Bean Ragout with Roasted Garlic and Porcini; Tangerine Custard Tart with Vanilla Scented Whipped Cream
