A great deal of Italian food comes from this contadino, or peasant heritage. The best cooks combine fresh ingredients with simple cooking techniques. Meats, fish, and vegetables are flavored with herbs and olive oil, and are often roasted, grilled, or baked. Aromatic sauces can often be made in the time it takes pasta to boil. Stuffed Baked Mussels (cozze gratinate – Positano), Linguini with Walnut Sauce (linguine con salsa di noci – Liguria), Fennel Sausage over Lentil Ragoût (salsiccia luganega con lenticchie – Tuscany), Fried Cauliflower (cavolfiore fritto – Northern Italy), Baked Apples with Red Wine (mele al forno – Piedmont)
