The word entered American English via Louisiana French in Louisiana and is thought to originate from the Choctaw word bayuk, which means “small stream.”  Cajun is a style of cooking developed by the Cajun–Acadians who were deported from Acadia to Louisiana during the 18th century and who incorporated West African, French and Spanish cooking techniques into their original cuisine.  Cajun and Creole food is one of America’s most delicious and unique foods!
